What is Vitamin C?
Vitamin C is a water-soluble vitamin that is necessary for normal growth and development.
The benefits include the growth and repair of tissues within the human body; and
is necessary to form collagen, which is an important protein for skin, scar tissue,
tendons, ligaments, and blood vessels.
Vitamin C is one of many antioxidants, which are nutrients that block some of the
damage caused by free radicals. This is a by-products of the human body as it transforms
food into energy. Toxins that build up within the body can accelerate the aging
process and can contribute to the development of various health conditions such
as cancer, heart disease, and a host of inflammatory conditions like arthritis.
Antioxidants also help reduce the damage to the body caused by toxic chemicals and
pollutants such as cigarette smoke.
Vitamin C deficiencies can affect hair, gums, skin, and teeth. Also; swollen and
painful joints; anemia; warding off infections; and a slower metabolic rate can
also result from Vitamin C deficiences.
The body does not manufacture vitamin C on its own, nor does it store it. It is
therefore important to include plenty of vitamin C-containing foods in your daily
diet.

One Fresh Cup is proud to add to its line-of specialized coffee products, certified
organic coffee direct from a small farm in Mexico.
Our organic coffee beans have been inspected and certified by an independent third-party
organization. Organic coffees are those that have been produced without the use
of pesticides, chemical fertilizers, or herbicides, benefiting both the producer
and consumer. Considering the strict guidelines for farmers of organic coffee beans,
the process does not stop there. The certification process also includes the necessity
to store organically grown beans separate from other coffee beans. One Fresh Cup’s
roaster adheres strictly to this requirement, as batches are stored so that no other
coffee beans can be mixed, even accidentally, with organically grown beans.
MORE ABOUT ORGANIC COFFEE
A socially responsible alternative to many coffees, emphasis is placed on recycling,
composting, soil health, preservation of water supplies, and the protection of the
environment. And for certification to be possible, a farm must operate under organic
guidelines for 3 years.
Organic coffees are traditionally grown at high altitudes under a canopy of trees
that provide shade, attract animal life and birds, and allow an abundance of vegetation
to thrive. This environment creates very little need for chemical treatment as vegetation
produces a natural compost that keeps the soil rich in nutrients. Birds, a variety
of animals, and even certain insects offer protection for the coffee plant from
certain bugs and pests that prey on it, again eliminating the need of chemical treatment.
The results are a larger, denser coffee bean providing excellent flavor. Farmers
also benefit because of a better working environment. As many consumers have seen
the term “Shade Grown” on organically grown products, these attributes make the
benefits of shade trees clear and is the reason most agencies consider the presence
of trees around the crop important for certification.
The benefits from the presence of trees does exclude many farmers however, as non-shaded
crops are normally higher yielding. Many farms actually cut down or thin valuable
shade trees in order to maximize the sun needed for higher-yield coffee varieties.
The overall effect is that the lower-yield production (a minimum 3-year process),
together with a higher cost of production (labor-intensive) and added cost of certification,
makes it difficult for many small farms to obtain certification resulting in a more
limited production of premium organic coffee beans. And together with the growing
socially responsible nature of consumers, the results are an increased demand for
organic coffees.
Finally, it is important to note that not all certified coffees are shade-grown,
and not all non-certified coffees use chemicals in the process. Many farmers actually
grow their coffee beans organically, but are not certified due to the high cost
of certification.
